Guanciale leggermente affumicato

The guanciale (pork cheek) is produced with the throats from selected pigs, raised in Friuli Venezia Giulia.

They are salted by hand, delicately spiced and slightly smoked with cherry and laurel logs, finally naturally aged for about 3/4 months.
